400g ground organic almonds
400g brown sugar
800ml soy yogurt
300ml liquid coconut oil
1 teaspoon of vanilla powder
15g Baking Powder
50g starch
300 g gluten-free flour mix

First, preheat the oven to 250 degrees.

(preferably top heat / grill).

In a large bowl, mix the ground almonds with the starch, flour, baking powder, sugar, and vanilla powder. Then add the remaining liquid ingredients and mix until a homogeneous dough is formed.

Apply some coconut oil to a small mold (18cm), add 4 tablespoons of dough and spread evenly. Now place the mold in the oven as high as possible for 4 minutes, the dough layer should have browned a little more on the surface.

Then spread another 4 tablespoons of dough on the pre-baked dough, bake again for 4 minutes and repeat this process (about 20 times) until the dough is used.

Then let the cake cool completely. You can see the individual layers. You can increase the layers as many times as you want. There are 20 examples of layered cake in the picture. You can use 150gr strawberry pieces for presentation.
