1 cup of oatmeal
1/2 teaspoon of baking soda
1/4 teaspoon of salt
1/4 cup brown sugar,
1/4 cup coconut sugar
1/3 cup chocolate chips
2 tablespoons of milk (more if needed)
2 tablespoons of oil
1/4 teaspoon pure vanilla extract
Combine all the dry ingredients in a bowl and mix until the cookie dough texture is obtained.
If needed, add 1-2 tablespoons of extra milk. Form a large dough ball, then put it in the fridge for at least 2 hours or freeze it until the dough is cold.
After the dough has cooled, preheat the oven to 170C. Form balls of dough and place them on a greased baking tray with a space between them.
Bake for 11 minutes on the middle rack.
Let the tray cool for 10 minutes without touching it, during this time they will harden.
If for some reason the cookies are not spread enough, press them down with a spoon after cooking.
Note: You can make extra cookie dough and freeze for later baking.
